Drink your greens

A smoothie can be a satisfying and healthy snack. You don’t have to follow recipes to create a good smoothie; you just have to throw what you have in excess into the blender and hope for the best. Usually things come out pretty tasty, but some combinations are definitely better than others.

A great combination includes peaches, kale (or other greens), coconut water and ginger. The sweet peaches help balance out the bitterness of the greens, the coconut water adds moisture without too much flavor and the ginger adds a bit of a zing. This smoothie is not only amazing in flavor, but incredibly healthy too.

The raw kale has calcium, fiber, vitamin C, antioxidants and phytonutrients. The peaches have additional antioxidants. The coconut water has electrolytes, hydrates faster than regular water and contains as much potassium as a banana.

Makes 1 large glass

2 cups coconut water
1 cup diced peaches (frozen if possible)
2 cups chopped kale (or other greens)
½ inch piece of ginger- peeled and grated or minced

Blend all ingredients together until smooth and enjoy!
