Papaya Mousse with Roasted Gooseberries

There’s nothing like papaya to make you feel serious tropical vibes. This chilled mousse served with roasted gooseberries is the perfect start (or sweet ending) to a beautiful summer day.

Papaya also just so happens to be super-rich in lycopene, one of the most powerful antioxidants and therefore DNA protectors out there! The mousse is vegan, but it’s still totally creamy and rich thanks to the Brazil nuts. Jam-packed with selenium and anti-inflammatory properties, this recipe will nourish you (& your Instagram) to the nth degree.

Papaya Mousse with Roasted Gooseberries


2 small Papayas
(ripe; peeled and sliced, seeds removed)

1/4 cup Brazil nuts
(soaked overnight and drained)

1 tbsp Flaxseed meal, ground & sprouted

3 Medjool dates, pitted

1/2 tsp Cinnamon

1/4 tsp Nutmeg, ground

1/4 tsp Cloves, ground

1/4 tsp Ginger, ground

1/2 cup Gooseberries

1 tbsp Honey, raw (I used buckwheat)

1 tbsp Aloe Vera Juice, unsweetened


Preheat oven to 400 degrees Celsius (for the roasted gooseberries).

Meanwhile, blend up the papaya, Brazil nuts (pre-soaked overnight and rinsed), flaxseed meal, dates and spices in a food processor or high powered blender. Pour into 2-4 serving bowls and place in the fridge. Wait at least 5-10 minutes to set and chill and it’ll thicken up like the pudding of your dreams.

For the roasted gooseberry topping, whisk together honey and aloe juice and coat over fresh (washed) gooseberries. Gooseberries? Trust me, they’re not as uncommon as you might think—you can likely pick them up at your local farmer’s market, or even at the grocery store. They’re usually next to the berries or placed near fresh figs or guava fruit. Roast this glorious concoction in the oven (on any parchment paper lined baking dish) for about 10-15 minutes. Your kitchen will start to smell like heaven, and your gooseberries will become soft and brown (in a more attractive and less gross way than that sounds).

Grab the chilled mousse from the fridge and top it with a bit of the warm roasted gooseberries… and enjoy.
